Cognac produced at Domaine Pasquet in Eraville, France. 100% Ugni Blanc, blend of 75% Grand Champagne and 25% Petite Champagne eaux-de-vie. Aged a minimum 4 years; matured approximately 12 months in 2-year-old 400-liter French Limousin casks before being transferred to used barrels. Aromas of grape must, quince, underripe pear, and crab apple lead to an agile palate with hints of cinnamon and soft, green herbs and a lasting but delicate finish displaying pleasant salinity.
