Delfino Tobón Mejía of San Pablo Ameyaltepec, Puebla refers to the massive agaves that this batch was distilled from as Blanco, and this batch was his first attempt at fermenting and distilling this species on its own. Along with friends and family, Delfino harvested these mammoth, low-yielding agaves on the outskirts of the city of Tehuacan, where they spent nearly 15 years growing. Proofed with heads, hearts and holanda (tails) by Delfino.
