Taking a cue from an established technique in Scotch production, this small batch bourbon rests for three to six months in port casks prior to release. The cask finishing process lends a pleasant undercurrent of red fruit to the nose, which is otherwise sweet and spicy. The palate has a sweet butterscotch core that's seasoned by black pepper spice and charred oak. The port character returns on the finish, which is rich and well balanced.
