Made from a rare purple rice that is polished slightly to remove the husk and then fermented with koji and local ferments this wild and inspiring Pet Nat is all Vietnamese. From the toasted rice on the nose to the wild path down a lane strewn with fish sauce, tart plum and a meaty earthiness.
