In the Saint Aubin appellation of Burgundy, the grapes for this Chardonnay grow in clay soils atop 40 centimeters of active limestone. The vines are only ever worked by hand or horse, and the grapes are then direct press and foot-crushed. The distinct terroir and straightforward practices give way to a wine with perfectly balanced tension and precision.
