This wine captures a unique plot which cannot be mechanized so everything is done manually. After a fifteen day maceration on whole cluster the juice goes into oak barrels for a year prior to bottling without filtration. This rare Gamay is organically grown in the flinty clay of Sainte Gemme in the Loire — a land seldom known for its Gamay but this crispy red fruit and savory palate shows that they work well together!
