Val de Mer is the second wine from Montreal native Patrick Piuze, a gentleman who has become a force to be reckoned with in Chablis for over a decade now. Like his first label, Val de Mer is made with hand-harvested fruit (rare in this part of Burgundy) and fermented with native yeast. Made from 100% Chardonnay grown in Tonnere (a region just outside the Chablis AOC), this classy, mineral-inflected white is vinified and aged in stainless steel and offers sea spray, lifted orchard fruit and pretty citrus peel flavors.
