The soils here, tucked between Mount Macedon and Mount Bullengarookare, are the famous ‘Cambrian soils’—red dirt made up of eroded basalt over limestone, shot through with greenstone and jasper. This is amazingly open, generous Syrah, with classic notes of white and pink pepper, violets and oolong.
