The 2020 Extra Brut is a brand new blend of 48% Pinot Blanc, 30% Chardonnay, 22% Pinot Noir, co-fermented in neutral French oak barrels and aged on lees for 11 months before bottling. The wine was in tirage for just over 3 years before hand riddling and disgorging. Super mineral, with bright (but not sour) acid and notes of lemon and green apple.
