Crisp, tart, mineral. That spine tingling acidity. Yes this Chablis has all of the signature traits of a such a well defined style, but it also has this shimmering energy which makes it an absolute knock out. It's somewhere between the sensation of biting directly into a lemon rind and the coolness of a stream of fresh water. This small estate is one of the few in the region that still value hands on farming on organic vineyards. This Chablis AOC sees a small amount of new oak, which amplifies those glowing highs.
