"Sans Souci" means "without worries" in French, which describes how the Fleurie fermentation went in 2023. 100% Gamay. Vines planted between 1950 and 1980 in Fleurie "Les Fonds", south-facing, sandy soil with pink granite. 100% whole cluster, 10 ppm SO2 added before vinification, fermentation started with an ambient yeast pied de cuve with white grapes, daily wetting of the cap with a bucket, punch downs after 5-7 days, pressed after 10-14 days with a vertical press, aged for 8-10 months in used barrels, no fining, no filtration, 5-10 ppm SO2 added before bottling (approx. 35 ppm total at bottling).
