This is truly artisanal Sauternes made by hardworking farmers who are willing to sacrifice quantity for excellence. The rigorous sorting to select the best fruit means making up to 7 passes through the vineyards, picking berry by berry. The yields come out to around 10 hectoliters per hectare compared to Chteau dYquem. This is predominantly Sémillon, with Sauvignon Blanc, Sauvignon Gris, and a bit of Muscadelle to round out the blend. While Sauternes can be quite rich, the acidity really carries the wine through its long and pleasurable finish.
