Diebolt-Vallois Description
Only made in the greatest vintages, the Fleur de Passion comes from old-vines parcels in six of the finest climats in Cramant, fermented and matured exclusively in oak barrels with no malolactic, resulting in wines of perfect clarity and finesse, “like the wines my grandfather made,” according to Jacques Diebolt. At first, the elegant Chardonnay nose suggests lime blossoms, green apples, white cranberries, minerals, and toasted almonds, with peaches, citrus, fresh fennel, and coconut moving in and out of the foreground as the wine evolves in the glass. On the palate, the wine is racy, precise, and energetic, with a fine mineral structure, and a delicate persistent mousse. The flavors echo the nose, adding more white flowers, caraway seeds, minerals, and lemon zest, and the long clean finish is sustained by lively tartaric acidity and the velvety, persistent mousse.
