Australia's sparkling wine scene is on the rise, and Clover Hill is leading the charge with this Champagne-like gem. While the winery itself is based in Tasmania, the grapes for this cuvée are sourced from the Pyrenees ranges in Western Victoria, just a few hours northwest of Melbourne. Clover Hill, established in the 1980s, is one of Australia’s few sparkling houses exclusively producing traditional-method wines. This blend of 68% Chardonnay, 27% Pinot Noir, and 5% Pinot Meunier benefits from meticulous use of reserve wines and extended lees aging. The result is a beautifully textured sparkling wine with creamy richness and complex brioche and citrus notes, balanced by vibrant natural acidity.
