Nicolas Palazzi and the team at PM Spirits worked with Eduardo Ojeda– chief winemaker at Valdespino and a co-owner of Equipo Navazos—to blend their own propriety brand of Sherries. This one is a selection from several criaderas, the wines an average age of 15 years. It still holds a brisk, salty memory of its time as a Fino, even as the flavors broaden out into saturated richness of barrel age.
