François’ family have been vignerons in Santenay since 1679. François was educated in Avize, Champagne, and then worked under David Ramey at Chalk Hill in California. It was during his studies that François decided he wanted to take the significant step of converting the domaine to organic farming. This is a more generous style of Chardonnay, and it’s all based in the soil. “Les Hates” is a lieu dit in the mid-slope of the Côte, sandwiched between the 1er Cru sites of Beaurepaire and the more famous 1er Cru Santenay sites. Here, there is more topsoil which creates a richer, longer wine.
