Jean-Francois is the 14th generation of vignerons located in the village of Vernantois and released his first wines in 1992. In the cellar, the work is done with minimum intervention, without additives of any sort and minimum to no SO2 used. Vin Jaune is made with 100% Savagnin from vines averaging 30 years old. The wine is left in barrels for 60 months minimum and aged under flor ('sous-voile' in French). These wines are therefore hard to make, super rare, and are special in their nutty, dried fruit-like flavors.
